Gnocchi, tomato sauce, bacon & mint.
A super simple and refreshing gnocchi recipe. Once you’ve tried mint on your pasta basil can’t compete anymore. Hope you enjoy!
Ingredients
serves 4
500 gr of gnocchi (I used store bought )
400ml of tomato sauce, I used my own recipe from my cookbook 'vegetalia'
100 grams of plantbased bacon
Olive oil for frying
10 fresh mint leaves
And ofcourse my favorite plantbased parmesan 'gondino', grated
How to
Cook the gnocchi according to package instructions.
2. Fry up the bacon in some olive oil until crispy then add the tomato sauce.
3. Add the gnocchi once cooked then let it heat through and serve with the fresh mint and grated parmesan
