Lemon & almond pesto linguine

Summer is almost to an end, I feel like we didn’t have much of a summer this year here In Belgium. There was su much rain and cloudy days. That doesn’t mean you can’t bring a little summer to your plate tho. This lemon and almond pesto does it like no other recipe. Bright and zesty from the lemon peel, fragrant from the fresh basil and a little garlic, nutty and wholesome from the roasted almonds. Pair it with al dente linguine and you have the perfect summer pasta.

I got these new ceramics by Studio Riviera and I instantly knew this pesto pasta dish would be perfect to serve in these plates. I think this color is by far my favorite of their “UNI” collection. Summer all the way.

This pesto is completely cheese free, we don’t even need vegan cheese. As you know I’m obsessed with my vegan parmesan from Gondino but this time I only added a little on top, which is totally optional because this pesto is amazing without it!

You only need:

  • lemon peel

  • toasted almonds

  • olive oil

  • garlic

  • fresh basil

  • salt

  • an ice cube

7 ingredients and you summer pesto is ready. Chuck everything into a blender and you’re done.

You could also double the recipe to make more to have on hand throughout the week. You can use this pesto to top your crostini, use as a salad dressing or use as a dip for veggies or crackers.

recipe

This serves 2 -4 people

ingredients

  • zest of 2 lemons

  • 40 gr of fresh basil leaves

  • 60 toasted almonds

  • 1 very small garlic clove

  • 8 tbs of olive oil

  • 1 ice cube

  • pinch of salt

  • Linguine pasta, or other of choice, cooked al dente in salted boiling water (reserve some of the cooking water too)

How to

  1. Place all of the ingredients, except for the pasta, in a blender and blend until you have a smooth pesto sauce. Taste and season accordingly.

  2. Toss the pesto with the cooked pasta and add a little cooking water to thin out the sauce so every pasta strand is coated in the sauce.

  3. serve with fresh basil and chopped almonds top.

  4. Buon apetito!
