Artichoke soup

Artichokes is one of those vegetables that I eat way too little of. As a half Italian I feel a bit ashamed because artichokes are such a delicious vegetable. So i’ve set myself a goal of eating it more in creative ways. I had this big bag of frozen artichoke bottoms in my freezer that were there for ages and since it’s winter aka soup season, what better way than to add them into a delicious creamy soup. The ingredients are simple and you probably already have them in your pantry!


Recipe

Serves 4 people

Ingredients

  • 1 leek, cleaned and chopped

  • 2 shallots, chopped

  • 3 potatoes, peeled and cubed

  • 400 gr of frozen artichoke hearts or bottoms

  • 1-1,5 L of vegetable stock or water

  • salt and pepper to taste

  • 1 lemon

  • 5 tbs of olive oil

  • fresh parsley for garnish.

Instructions

  1. Heat up the olive oil in a pot.

  2. Add leeks and shallots and fry for a few minutes until transluscent.

  3. Add the vegetable stock, potatoes and artichokes.

  4. Bring to a boil and leave to simmer on low heat for 40 minutes or until the artichokes are soft.

  5. Mix the soup with an immersion blender until smooth and creamy and season to taste.

  6. Serve and garnish with a squeeze of lemon and parsley.

  7. Delicious with crusty bread, buon appetito!
