French bread pizza boats

This pizza only takes 15 minutes and is so delicious. A real crowd pleaser! I used homemade pesto, but storebought works too! Use colourful cherry tomatoes, a plant based mozzarella that melts and for that extra creaminess my homemade almond ricotta. ⁠

Ingredients

makes 4 pizze

1 long french bread, sliced in half (lengthwise) and then halved again to make 4 pieces. ⁠
1 cup of basil pesto ⁠
1 box of cherry tomatoes, halved ⁠
plantbased mozzarella of choice ⁠
optional but recommended, my homemade almond ricotta (find recipe in both my cookbooks) ⁠
olive oil ⁠
salt & pepper to taste ⁠
fresh basil and arugula to serve ⁠

How to

Preheat the oven to 180°C. ⁠
Top each bread half with pesto, add mozzarella and cherry tomatoes. Then finish of with some dollops of ricotta. Drizzle over some olive oil and season with salt and pepper. Bake in the oven for 10 minutes and serve with fesh basil and arugula. ⁠
