Arugula and spinach pesto pasta
Celebrate fresh flavors with this easy rucola and spinach pesto. I love eating green food, it’s fun and it makes me feel alive and zesty. This gorgeous green pasta is made with simple, fresh ingredients and comes together in a pinch for the perfect quick and easy dinner! This dish will quickly become a regular on your dinner recipe rotation.
Ingredients
serves 4
(you might have some pesto left over)
2 (packed) cups of fresh spinach
2 (packed) cups of fresh rucola
1/4 cup / 35 g of toasted pine nuts
1/4 cup/ 35 g of nutritional yeast or my favorite vegan parmesan, Gondino
125 ml of olive oil
1 large garlic clove, peeled
salt and pepper to taste
400 g rigatoni pasta
